All hail the tastiest bean-based appetizer in town. The heartier native sibling of the light-skinned chickpea, the kala chana shines in all its proteinaceous glory in this exquisite avatar, that can hold its own against the meatiest tikkis and koftas. Serve as an appetizer, or as a side with the mains.
Accompaniments: Serve warm with a tangy kachumber or mint & coriander chutney.
Storage: If you are going to consume it within an hour or two of delivery, it's safe to keep it out on the counter but do heat it well before serving. Anything longer than that remove from the delivery container(s) & refrigerate and heat well before serving. In the refrigerator it will remain great for up to 2 days. If you want to save it longer, freeze it in an airtight, shallow, freezer-safe container and it will remain perfectly good for up to 1 month. When thawing, do it in the refrigerator or even a microwave but do not thaw at room temperature. Always reheat well before serving.
Fun Fact: Tikkis are a form of kababs (which arguably originated in erstwhile Persia) but have become far more "Indian" with all the vegetarian versions available today.
