Potato Ghee Roast

Our recipe is inspired by the vibrant flavors of Mangalorean cuisine and is made with only the freshest ingredients, ensuring that each bite is bursting with bold, authentic taste. Potato Ghee Roast is typically prepared using sliced, diced or baby potatoes that are marinated in a mixture of spices and then roasted in ghee (clarified butter) until crispy and golden brown.

Accompaniments: The mild flavor of Roomali Rotis or Naan balances the spiciness of the Potato Ghee Roast and provides a neutral base for the flavors to shine.

Storage: If you are going to consume it within an hour or two of delivery, it's safe to keep it out on the counter but do heat it well before serving. Anything longer than that refrigerate and heat well before serving. In the refrigerator it will remain great for up to 4 days. If you want to save it longer, freeze it in an airtight, shallow, freezer-safe container and it will remain perfectly good for up to 2 months. When thawing, do it in water or in the refrigerator or even a microwave but do not thaw at room temperature. Always reheat well before serving.

Fun Fact: Potatoes are not native to India, and were introduced to the country by the Portuguese in the 17th century. However, since their arrival, potatoes have become an important staple in many regional cuisines, including Karnataka's.
